Sautéed Squash and Carrots

I added two Hatch chile peppers to the mix and this went from good to GREAT!!!
This recipe is extremely delicious! Nice and light and goes with anything!!! I've made it a number of times and my whole family LOVES it! I use my mandoline and slice everything on the thinest setting...quick and easy for a weeknight dinner!
