How to Make It

Step 1

Preheat oven to 400°.

Step 2

Combine first 3 ingredients, stirring with a whisk. Place salmon on rack of a broiler pan lined with foil; sprinkle fish evenly with salt. Spread half of marmalade mixture over fish. Bake at 400° for 18 minutes or until fish flakes easily when tested with a fork. Remove from oven. Spread remaining marmalade mixture evenly over fish.

Step 3

Preheat broiler.

Step 4

Broil fish 3 minutes or until topping browns.

This is an incredibly easy, quick and well received meal in our house. I served it up with sauteed spinach, and NO LEFTOVERS! (My kinda meal!)

Instead of putting the glaze on the salmon, I decided to reduce the glaze so the garlic wouldn't be raw. Upon reducing it, it lacked some flavor, so I added 2 tb of water, 1 ts of fresh ginger and one scallion. It just elevated the glaze. I then put the glaze on the salmon and then put it in broiler until it got a nice crust on top. I finished it in the oven. When it came out, I brushed the remaining glaze on top. With the simple additions, it's a 5 star recipe.

I stumbled on this last night when I realized I didn't have a key ingredient for the salmon recipe I usually make. This was light-tasting and delicious - way better than you'd guess from the simplicity of the recipe. Quick and easy enough for a weeknight meal but I wouldn't hesitate to serve it to company either. I will definitely make it again.

I love this recipe and have made it many times, although I put the glaze on the salmon before roasting and skip the broiler. Seems to keep the fish very moist. If I'm home alone, I just use a 4-ounce piece and bake for only 10 minutes, and even with the larger portion, I only bake about 14 minutes. Had this tonight with sweet potato fries (baked right next to the salmon, and cherry tomatoes sauted with shallots.
