How to Make It

In a large, heavy saucepan, over medium heat, cook the onion in the butter until softened, about 5 minutes. Add the flour and stir until smooth. Whisk in the broth and milk, then add the sweet potato, bay leaf, and thyme. Bring to a boil, reduce heat, and simmer, stirring occasionally, 8 minutes. Add the fish or meat and broccoli; simmer 5 minutes for the salmon, 7 minutes for the chicken, or 10 minutes for the pork. Season with the salt and pepper. Ladle into 4 bowls.

Deeeeelish! I broiled the salmon first. Also didn't have fresh thyme on hand, so used italian seasoning instead. Used quite a bit, as it was a bit bland without the extra seasoning. Let simmer a good 1/2 hour so the potato and broccoli were nice and soft. Very good recipe. Will definitely be making again.

This is the 1st time making this recipe(cold rainy day). It was pretty straight forward. I did change a couple things: Califlower for yucky broc. and I broiled the salmon w/ chili powder 1st. It's still a tasty soup.
