I didn't saute the spinach - just chopped it and added it to the potato and salmon (and I used high quality canned). I didn't add the cream either but rather 2 eggs, just folded the salmon into the potato and spinach mixture. These held together great and I didn't even chill them. I also did half canola mayo half Greek yogurt and no jalapeno. Served with steamed zucchini.
