Love the flavor diversity. Great weekday meal, super easy. Prefer to make with smaller chicken pieces, in kind of a salad style.
A hit with the whole fam. We didn't think it needed further sweetening, though I might cut back on the vinegar to 1 1/2 Tbs. The super sweet peaches went nicely with the mild vinegar and pops of fresh basil. I made my own chicken with just garlic salt + pepper...still a very quick/easy recipe. Perfectly paired with a salad for a nice summer meal. You could even cut the chicken and serve atop lettuce, drizzling the sauce and garnishes on the whole thing.
The sauce was definitely too bitter, even after I put extra peach preserves and honey in it. I actually just created a sauce of peach preserves and honey. I think I will try it again, but without the vinegar to see if that makes a difference.
My rating of four stars is based on changing the recipe somewhat. I probably used about 1/4 cup of peach preserves and also a tablespoon of honey, because it was too bitter as written. With that and the rest of the ingredients, this was an excellent dish with unique flavors.
