Seeding the tomatoes will enhance the appearance of these appetizers.

Ingredients

  • 1 (7-ounce) jar roasted red bell peppers, drained and chopped
  • 6 ripe tomatoes, seeded and diced
  • 3 tablespoons shredded Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 garlic clove, minced
  • 1/2 teaspoon coarse-grained sea salt or kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 24 French bread slices, toasted

How to Make It

Combine first 7 ingredients; spoon 1 heaping tablespoon over each toasted bread slice.
