Roasted Lemon Lamb Rack with Peaches and Feta
This recipe was originally written with apricots in mind. The problem is, a truly wonderful fresh apricot is hard to find in most places in America, and apricots don't travel well. If you can get your hands on Individually Quick Frozen (IQF) halves, or you happen to live where apricots thrive locally, get them. Treasure them. A discussion about alternatives raised issues of geography, inspiration, and adaptation. This recipe, while inspired by my half-Greek roots, was developed in Georgia. Georgia = Peaches.
