Cut off pointed end of 5 large garlic bulbs. Place garlic bulbs on a piece of aluminum foil, and drizzle with 1 Tbsp. olive oil. Fold foil to seal. Bake at 400° for 1 hour. Squeeze pulp from garlic into a small bowl. Stir in 2 Tbsp. olive oil, 1/2 tsp. chopped fresh thyme, and salt and pepper to taste. Serve with toasted bread slices, if desired.
