How to Make It

Preheat oven to 450°. Combine cauliflower, olive oil, lemon rind, salt, and pepper on a jelly-roll pan; toss to coat. Bake at 450° for 25 minutes or until browned, stirring once after 10 minutes. Sprinkle with pine nuts.
