Baking caramelizes the sugars in this so-good-for-you vegetable, adding delicious flavor.

How to Make It

Step 1

Preheat oven to 425°. Drizzle a 15- x 10-inch jelly-roll pan with 1 Tbsp. olive oil. Cut cauliflower vertically into 1/4-inch-thick slices. Arrange in a single layer on prepared pan. Drizzle cauliflower with remaining olive oil; sprinkle with salt and pepper.

Step 2

Bake at 425° for 25 to 30 minutes or until golden brown. Sprinkle with salt to taste.

I love this recipe and make it often. I am the only cauliflower eater in the family so I'll make it for myself a couple of times per week. I use Crazy Jane's Mixed Up Salt blend instead of regular salt and pepper

All my family enjoyed the caramelized flavor of this less than favorite vegetable. I served it to guests and they raved, too. Great side dish to almost any entree.

ZERO stars. I LIKE cauliflower and hated this. Took too long for something just "so, what?" Husband hated it, daughter wouldn't touch it. I threw the rest of it out since I couldn't face it as leftovers. We don't throw much out. Right in the trash.
