Serves 4 (serving size: about 1/2 cup)

If you don't have Cajun seasoning, you can combine equal parts garlic powder, paprika, black pepper, ground red pepper, and dried oregano.

How to Make It

Heat a large nonstick skillet over medium heat. Add oil to pan; swirl to coat. Add sausage; cook 4 minutes or until well browned, stirring occasionally. Stir in onion, bell pepper, and garlic; cook 5 minutes or until vegetables are tender. Stir in Cajun seasoning; cook 1 minute. Stir in beans and rice, and cook 3 minutes or until thoroughly heated.

Wasn't as spicy as I had thought it would be....maybe my Cajun seasoning is out of date.  Anyway, it was still very good and VERY easy to throw together.  My husband loved it.  I'll make it again.
