With this pickled cucumber recipe, pickling doesn’t have to take days or even weeks. You can enjoy this zingy and flavorful side within a few hours. Enjoy quick pickled cucumbers in a crisp summer salad, on a pulled pork sandwich, or as a tangy snack. Add them to a loaded charcuterie board or turn them into a fresh hot dog relish. These pickles have the crunch and briny flavor you crave, with a little extra heat from the sambal oelek. Once you know how to pickle cucumbers, you’ll realize it’s a simple and easy way to enjoy your summer produce.

How to Make It

Slice cucumber crosswise into thin rounds. Combine cucumber and garlic in a medium bowl. Combine vinegar, water, sugar, and salt; microwave at HIGH for 2 minutes or until boiling. Pour hot vinegar mixture over cucumber mixture; stir in sambal oelek. Cover and chill at least 4 hours. Serve with a slotted spoon, or drain before serving. Garnish with sliced green onions, if desired.
