How to Make It

Combine first 4 ingredients in a medium bowl. Pour dressing over mixture; toss gently. Cover and chill 2 hours. Serve on lettuce-lined salad plates; sprinkle with hard-cooked egg.

Easy and healthy. I thought it was very tasty, and a nice alternative to pickled beets. With the egg included, it makes a great lunch for brown-bagging.
