How to Make It
Preheat oven to 350°F. Combine chickpeas, flour, mint, parsley, and honey in the bowl of a food processor; process until well combined and a dough forms. Add water, 1 tablespoon at a time, as needed to incorporate mixture.
Place dough in a plastic bag or piping bag with a star tip, and pipe 1 teaspoon of dough per treat onto a baking sheet lined with parchment paper. Bake in preheated oven until lightly golden and slightly crisp, 17 to 20 minutes.
Cool completely on baking sheet, and store in an airtight container.
