Because I was also roasting some cauliflower as a side dish, I used a 475 degree oven and doubled the cooking time. It still was just slightly under, so I finished it in the microwave for a minute. The flavors were outstanding. Used crumbled blue cheese for hubby and I while my daughter used feta. Will definitely make again.
Made to directions except microwaved the onion sections two minutes before adding them to skillet, because we like them a little softer than the recipe allows. Very easy.
