6 servings (serving size: 1 1/4 cups salad, 1 1/2 ounces sausage, 3/4 ounce cheese, 1/2 bread slice, about 2 cornichons, and about 2 tablespoons chutney)

Ploughman's lunch platter is a traditional pub salad made with sausages or sliced meats, cheese, and any combination of mixed lettuce, tomatoes, cucumbers, coleslaw, or chutney. This dish is always served with soda bread. Adjust the number of servings or ingredients to suit your tastes.

How to Make It

Combine first 6 ingredients in a large bowl, stirring well. Slowly drizzle oil into vinegar mixture, stirring constantly with a whisk. Add lettuce; toss to coat. Arrange salad on a platter with sausage, cheese, Brown Soda Bread, and cornichons. Place Tomato Chutney in a bowl; add to platter.

This is a good dish. However, chicken sausages? It needs some traditional Irish sausage: Bangers, if you will.

Made this last night, and my family loved it! Definitely worthy of a special occasion. Served alongside a glass of Irish extra stout. I will definitely put this platter together again--simple and rustic.

Nice recipe. Not even remotely Irish, though. Anyhoo.. I substituted Branston Pickle for the pickle, more traditional.
