This Greek-inspired pizza, featuring roasted red peppers, capers, and crumbled feta cheese, takes only 25 minutes from start to finish.

How to Make It

Step 1

Preheat oven to 450°.

Step 2

Place focaccia halves, cut sides up, on a baking sheet. Combine minced garlic, tomato paste, and dried oregano in a small bowl; spread evenly over focaccia halves. Top evenly with roasted peppers, onion, and capers; sprinkle with feta cheese. Bake at 450° for 12 minutes or until focaccia is golden. Cut each pizza in half.

Chef's Notes

Bottled roasted red bell peppers taste delicious. They are often less expensive than fresh peppers, and they help to slash prep time. The feta cheese will not melt, so use the crust's golden color as an indicator of doneness.

We enjoyed the use of the foccacia but DH didn't like the peppers (slimy) and my daughter took off all the capers she could find.  I had sauteed the red onion along with some slice shiitake mushrooms that I needed to use up.  I think we'll have this again but with different toppings.  Very quick and easy.

This was a nice variation on regular pizza. I added kalamata olives and sauteed the onion slightly first. My family said some grilled chicken would be good to add as well. Really easy to make!
