How to Make It

Step 1

Place pineapple chunks in a small bowl, and cover with rum. Let stand at least 3 hours, up to overnight. Drain pineapple (reserve pineapple-infused rum for cocktails). Place pineapple on a plate lined with paper towels. 

Step 2

Place coconut on a plate. Dip larger end of pineapple in melted chocolate, and then dip in coconut. Chill 10 minutes, and serve.
