Creamy and spicy, the pimiento cheese adds just the right kick to this burger. Use any leftover cheese in finger sandwiches or as a dip with celery sticks and crackers.
Combine ground chuck, salt, and pepper gently. Shape into 6 (4 1/2-inch) patties. Cook 3 patties in a large skillet over medium-high heat 8 minutes on each side or until no longer pink in center. Top each patty with 1/3 cup pimiento cheese; cover and cook 1 more minute or just until cheese melts. Remove from skillet; keep warm. Repeat procedure with remaining 3 patties and 1/3 cup pimiento cheese per patty. Serve on kaiser rolls with mayonnaise, lettuce, tomato, onion, and pickles.
