Blend 1 tablespoon fresh basil leaves and lemon juice in a blender for 1 minute. Pour mixture through a fine wire-mesh strainer, discarding solids.
Combine Pimm's No. 1, 1 ounce (2 tablespoons) basil-lemon mixture, and Simple Syrup in an ice-filled cocktail shaker. Cover with lid; shake vigorously until thoroughly chilled (about 30 seconds). Strain into an ice-filled rocks glass. Garnish, if desired.
FYI, this recipe is incorrect. 1 cup of lemon juice would equal 8 OUNCES of lemon juice! Yikes! 8:1 ratio of acids to sugar would be crazy sour. This is supposed to be between 1/2 to 1 oz lemon juice, depending on who you ask. Also, it would be more appropriate to list the basil as a quantity in leaves, not volume - since no one will chop up basil and fill a tablespoon. Even if they did, this amount would be too little. The recipe should call for 2-4 leaves, depending on size.I should know because I work for the company that invented this cocktail for Searsucker...
