How to Make It

Step 1

Heat oven to 400° F.

Step 2

Remove the giblets and neck from the cavity; freeze or refrigerate for use another time.

Step 3

Cut the garlic crosswise in half and separate into cloves. Cut the lemon into 1-inch chunks.

Step 4

Stuff the chicken with the garlic and lemon. Tie the legs together. Twist the wings under the back so the neck skin is pinned in place. Rub the skin with the olive oil and sprinkle with salt and pepper. Place in a roasting pan.

Step 5

Roast for 1 hour, 15 minutes, checking the temperature with an instant-read thermometer. The chicken is ready when the breast meat registers 160° F and the juice runs clear when the meat is pricked with a fork.

Step 6

Remove from the oven and let stand 10 minutes. Remove from the roasting pan and pour the pan drippings into a cup. Skim off and discard the fat that comes to the top. Carve the chicken and serve with the pan juices.

This is the best way to roast a chicken. It is easy, yet gives the flavor I want & tastes good even when eaten cold later on. Plus, those scraps which are often left over can we used for chicken salad or making soup. Perfect for a family or just yourself.

The ingredients include thyme or rosemary, but I don't see the herb used in the directions. Is the sprig to be placed in the cavity? Or perhaps chopped up and rubbed under the skin?

June 02, 2010 This is SO good! Granted I used a local fresh chicken but still, fabulous! The oven time is perfect. The chicken comes out juicy and delicious. I baked it both on a roasting pan and a pan covered in tin foil and they both turned out great. This truly is the "Perfect Roast Chicken".
