How to Make It
Combine pears, 3/4 cup sugar, lemon rind, and juice in a large mixing bowl; toss well. Spoon pear mixture into pastry shell.
Combine flour, 1/2 cup sugar, nutmeg, cinnamon, and mace in a small bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Sprinkle mixture evenly over pears. Bake at 350° for 1 hour. Cool.
