Combine the first 3 ingredients in a large saucepan; cover and cook over low heat 40 minutes or until very tender. Mash to desired consistency; stir in sugar and amaretto. Serve at room temperature or chilled.
Applesauce has somehow become a staple in our house, but I get tired of making the same every time so I thought I'd give this a try. Not a fan of cooking with pears, they usually don't give enough to a dish, but we actually liked this variation of applesauce alot. The pears provide a sweeter tasted and a different texture, and you can actually taste the amaretto, but it isn't overpowering. We were impressed.
