Peanut Butter Granola Crunch Parfaits are the perfect middle-of-the-day springtime snack to hold the kids over until dinner.

How to Make It

Step 1

Preheat oven to 450°.

Step 2

Combine first 6 ingredients in a large bowl. Heat syrup, peanut butter, oil, and vanilla in a saucepan over high heat, stirring until smooth. Add to oat mixture; toss to coat.

Step 3

Spread oat mixture on a foil-lined baking sheet. Bake 9 minutes, stirring after 5 minutes. Divide yogurt among 6 parfait glasses; top each serving with 1/3 cup granola.

Delicious!  It was recommended that I double the recipe and I'll have to watch that I don't eat too much of it  and need to make sure I share it with the others in the house. I didn't have wheat germ on hand, had only light brown sugar, regular pancake syrup and used the organic peanut butter instead of reduced fat, but it turned out well The time of 9 minutes in the oven worked for me.

Beware: I think the oven temperature is way too high in this recipe. Mine burned before the first five minutes was up. I won't be making this again.
