How to Make It

Start with Van's Multigrain Belgian waffle. Add softened ice cream, sliced peaches, cinnamon, pecans, and fresh mint leaves.

Great Way to Start the Day

I used Eggo Multigrain waffles as that is what my market had.  Unfortunately, peaches are not yet in season so I used frozen.  It was still good but it will be even better with fresh, juicy peaches or nectarines.  I didn't bother with the mint.  And for some reason, my browser shows this recipe calls for 112 Tablespoons of chopped pecans.  I had to assume this was 1 1/2 Tablespoons.  Will make again.
