Sweet peach dressing amps up the summery deliciousness of a simple garden tomato salad.

How to Make It

Combine first 4 ingredients in a large bowl, stirring with a whisk. Let stand 15 minutes, stirring occasionally. Add oil slowly, stirring with a whisk until blended.

Funny, we made the same changes as daneanp . . . used the mini blender to make an emulsion rather than a chunky sauce & also used only 4tbs of oil.  Very good.  Served on CL's tomato/cuke salad  from same p 90, July 2016.   Excellent summer salad.

I opted to use my food processor so the peaches became more liquid than chunky (as the photo shows).  I only used 4 tablespoons of oil and that seemed like plenty.  Nice flavors for our green salad with sliced red onion and crumbled blue cheese.  Would make again.
