Serve this with grilled chicken or pork, or over ice cream. You can use fresh strawberries in place of the raspberries.

How to Make It

Step 1

Combine water and sugar in a small saucepan. Bring to a boil, and cook for 30 seconds or until sugar dissolves, stirring constantly. Remove from heat, and stir in rum, lime rind, and lime juice. Cool to room temperature.

Step 2

Combine peaches, grapes, and raspberries in a large bowl. Add the rum mixture, tossing to coat. Garnish with mint sprigs, if desired.

A great summer dessert, really nice over vanilla ice cream, but also good on its own. The liquid tastes a bit like grenadine syrup, between the rum and raspberries.
