Preparation is so easy and dish is tasty. Not to mention the ingredients may already be in your pantry - no fancy ingredients! The next time I make this though, I will marinate the chicken with the same mixture (an hour long maybe) to give the chicken more flavor. The sauce is so good - lots of flavor - I'm thinking of doubling up the mixture.
I made a couple changes based on what I had available. I used asparagus instead of beans and yukon gold potatoes. I was also very generous with the garlic as we love it.Asparagus cooks quickly so I par cooked the potatoes in the microwave and then cut them into wedges. I cut boneless, skinless chicken breasts into approx. 4 oz. pieces and cooked the dish for 20 min and then finished with 4-5 min. under the broiler for some browning on top. My husband is still raving about how good the dish was. Do I tell him how easy it was?
Delicious flavor, but the potatoes were just barely cooked through, and I prefer them more well done. It would be easy to customize this recipe, though.
Simple recipe, lotta flavor. Husband and coworkers (who finished up the leftovers) all agreed it was very tasty. It is basic Mediterranean-style cooking--olive oil, lemon and garlic. Added a little chopped rosemary from the garden to the oil to up the flavor. I'd make this again in a heartbeat.
So easy, put it together and throw it in the oven. Very flavorful with the garlic and lemon.
