Not bad. Definitely quick and easy. I added a couple of tablespoons of Feta because I had some around and I think it helped. Like I said, it's perfectly good, and definitely easy, and I'll likely make it again, but it just seemed to be missing a little something. Maybe I'll add a little lemon zest next time.
This was quick and delicious. Used whole wheat orzo and regular balsamic vinegar (my store doesn't carry white balsamic). Served with smoked paprika tilapia (from CL Grilled Tilapia w/ Smoked Paprika and Parmesan Polenta).
Yum! So unique and very easy to make. Used a good aged, fresh parmesan cheese. Loved this!
The whole family loved it! Will definitely make again. The spinach (without the orzo) would also be good by itself or in an omelet.

I actually made this for my 1 year old since he likes pasta. Not sure whether he would like garlic and spinach. Surprisingly, he had 3 servings and wanted more. I will certainly make this for the family going forward. Tip: I put the spinach in the food processor so it's finely chopped/minced. Otherwise, my kid would not have liked leafy greens on his food.
I made this for dinner and added 2 chicken spinach feta sausages that we grilled and sliced and put on top of the orzo. It made a FABULOUS main dish for 3 easily.
So much better than I could have even imagined!
