Save time by baking potatoes a day ahead. Cover and chill until ready to assemble.

Beat potatoes, orange juice, nutmeg, and ginger in a large mixing bowl at medium speed with an electric mixer until smooth. Spoon mixture into a 13- x 9-inch baking dish coated with cooking spray.

Bake at 350° for 20 minutes or until thoroughly heated.
