The reason this recipe turned out dry for the others is because there should be 1 cup of milk. I also used the zest from an orange and fresh squeezed orange juice. I added 3/4 cup roasted chopped pecans. They turned out great.
I have to agree with the others, the muffins were very dry and I even added a little extra milk and juice. There wasn't any orange flavor. I like the idea behind these muffins, and think that the orange extract might add more orange flavor. The muffins also seemed tough to me. I would also add more pecans. I had like two pecans in my muffin. It did seem like a waste of time, but I like the idea of the flavors. I'm dissapointed, usually COoking Light has great recipes.
These were NOT worth the time, and were a waste of ingredients. They didn't have ANY orange flavor, and were very, very dry. I think there's too much flour, and not enough liquids, and definitely NOT enough orange flavoring. Should use regular orange juice, and not waste a can a frozen just for 2 T of concentrate. This recipe was a HUGE disappointment, and I've been cooking & baking for about 45 years.
