Open-Faced Hummus Sandwiches are a quick & easy pick for a fllling lunch or light supper. Serve Hummus Sandwiches with Garlicky Asparagus.

How to Make It

Step 1

Preheat broiler.

Step 2

Arrange bread on a baking sheet. Broil 1 minute or until toasted.

Step 3

Combine tomatoes and next 6 ingredients (through garlic). Spread about 1/4 cup hummus over each bread slice. Divide tomato mixture evenly among servings. Top each serving with 2 tablespoons cheese.

I thought these were great. Really flavorful and really quick/easy to make. Served with some broiled asparagus makes for a nice no-frill summer meal.

Fantastic - we ate these in wraps instead of open-faced (and then took the leftover wraps for lunch the next day). I never would have thought to combine hummus & goat cheese. Delicious!

I made these for my lunch this week. I used less hummus and more veggies but otherwise kept the recipe as written. Next time I might add even more veggies, like cucumbers and red bell pepper. Very good--filling for lunch at work.
