Cook this easy marmalade a few days before the party, and refrigerate (the flavor will improve). It's delicious with the Alabama Pulled Pork Sandwiches or spread on crackers. Or take a jar as a hostess gift when you're invited to someone else's party.

How to Make It

Melt butter in a medium nonstick skillet over medium heat. Add onion to pan; cook 20 minutes or until tender, stirring occasionally. Stir in sugar; cook 2 minutes. Add vinegar and remaining ingredients; bring to a simmer. Cook 6 minutes or until most of liquid has evaporated, stirring occasionally. Discard the bay leaf.

I substituted the Cider vinegar with Balsamic, but left everything else the same. I Think this is a fabulous recipe. I used it over baked Brie, I have used it with cream cheese on crackers and as a condiment on a turkey panini. It is really great! Making more tomorrow. Also everyone who tried it LOVED it!
