It's perfectly fine to use frozen mashed potatoes for convenience in this recipe. Once you add fresh onion and garlic, the dish will taste totally homemade.
1/4 cup finely chopped red onion
1/4 cup thinly sliced green onions
2 garlic cloves, minced
2/3 cup 1% low-fat milk
1 1/3 cups frozen mashed potatoes
1 teaspoon light butter
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
How to Make It
Coat a small saucepan with cooking spray; place over medium heat until hot. Add onions and garlic; sauté 3 minutes. Add milk to pan; cook until thoroughly heated. Stir in potatoes, and cook, stirring constantly, 3 minutes or until creamy. Stir in butter, salt, and pepper.
