How to Make It

Step 1

Preheat the oven to 350°. Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth.

Step 2

Combine flour and next 4 ingredients; stir well. Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut.

Step 3

Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350° for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely.

...made these--cut back on sugar by 1/2 cup, left out coconut and they were still quite sweet(will use only 1 cup next time),will tweak a little-- wondering if amount of oil was a bit too much-- was "oily" -- very surprised on how the "dough" was--resembled the no bake oatmeal version but not as dry --only baked 8-9mins--was surprised by a nicely soft-chewy cookie, a cookie that grows on you--the molasses made a very please-able cookie--thinking of making recipe again and trying a granola "bar" style by adding other ingredients like nuts,seeds,more dried fruit then adding the coconut back in. Worth trying again...Thanks for sharing = )

made it as my fav my always and will make as my special oatmeal cookies,a few friends and nehibors asked for recipe but I went one better and gave them your site address and told them to sign up for the best site on the net more will be knocking at your door soon I served them with coffee and tea as dessert. a ton of ohs and ahs! I was a hit that night thank you for your tried and true recipes keep up your wonderful job

I thought these were great! They were crisp yet chewy. I did add a cup of walnut pieces in place of the coconut and used 1 1/2 cups of raisins. This cookie recipe was so easy, delicious and a keeper for me.
