  • Preheat the oven to 350°. Combine first 4 ingredients in a large mixing bowl. Beat at medium speed of an electric beater until smooth.

  • Combine flour and next 4 ingredients; stir well. Add to sugar mixture, mixing well. Stir in oats, raisins, and, if desired, coconut.

  • Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets. Bake at 350° for 10 minutes. Cool slightly on cookie sheets; remove cookies to wire racks, and let cool completely.
