I thought these were great! They were crisp yet chewy. I did add a cup of walnut pieces in place of the coconut and used 1 1/2 cups of raisins. This cookie recipe was so easy, delicious and a keeper for me.
...made these--cut back on sugar by 1/2 cup, left out coconut and they were still quite sweet(will use only 1 cup next time),will tweak a little-- wondering if amount of oil was a bit too much-- was "oily" -- very surprised on how the "dough" was--resembled the no bake oatmeal version but not as dry --only baked 8-9mins--was surprised by a nicely soft-chewy cookie, a cookie that grows on you--the molasses made a very please-able cookie--thinking of making recipe again and trying a granola "bar" style by adding other ingredients like nuts,seeds,more dried fruit then adding the coconut back in. Worth trying again...Thanks for sharing = )
