Serves 6 (serving size: about 1 cup rice mixture and about 1 tbsp. sauce)

We incorporate lots of nutty flavor into traditional fried rice using sesame oil, cashews, peanut butter, and sesame seeds.

How to Make It

Step 1

Heat 1 tablespoon oil in a large nonstick skillet over medium-high. Add broccoli and mushrooms; cook 6 minutes. Remove broccoli mixture from pan (do not wipe out pan).

Step 2

Add remaining 2 tablespoons oil to pan. Add rice and cashews; cook 5 minutes. Stir in eggs; cook 1 minute. Stir in broccoli mixture, 1 tablespoon soy sauce, and pepper.

Step 3

Combine remaining 2 tablespoons soy sauce, peanut butter, vinegar, and 1 tablespoon water in a bowl. Top rice mixture with peanut butter mixture and sesame seeds.

I steamed my own brown rice - about 3 cups cooked (1.5 cups raw into the steamer) and used light soy sauce, but otherwise kept to the recipe.  If your broccoli is more in pieces than florettes, cook a bit longer, I did covered on medium high for 8-9 minutes.  Delicious!  Will definitely make again.
