Serve this simple, nutty rice alongside your family's favorite chicken or pork dish. We preferred the flavor of curly leaf parsley in this recipe rather than flat-leaf parsley. Toast the walnuts while the rice simmers so the nuts can be stirred in when the rice is done.

How to Make It

Bring first 4 ingredients to a boil in a medium saucepan. Add rice; cover, reduce heat, and simmer 18 minutes or until rice is tender and liquid is absorbed. Remove from heat; let stand, covered, 5 minutes. Add walnuts and parsley, and fluff with a fork.
