  • Prep time: 10 minutesCooking time: 25 minutes Preheat the oven to 425 degrees and line a large baking pan with aluminum foil. Whirl crackers into fine crumbs in food processor or blender. Add cheese, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Whirl briefly. Scrape into a bowl. Stir in olive oil. Spread 1 side of each piece of chicken with mustard and sprinkle with salt and pepper. Press chicken mustard-side down into crumb mixture; place in pan, coated side up.
