These easy No-Bake Chocolate-Oatmeal Cookies come together in a snap with just a few ingredients. Simply shape a sweet mixture of oats, peanut butter, coconut and cocoa into balls and let them set up on sheet of wax paper before serving. If you're not a fan of coconut, simply omit the flakes. On the flip side, if you lovea nutty flavor, you can substitute coconut oil for butter (oruse one part coconut oil and one part butter). The best thing about this simple recipe?   • Combine sugar, milk, and butter in a small saucepan; bring to a boil. Cook 1 minute, stirring constantly. Pour over reserved oat mixture; quickly stir to mix well.

  • Immediately drop by heaping teaspoonfuls onto waxed paper-lined baking sheets; let cool. Carefully remove from waxed paper to serve.
