Maple syrup and lime juice meld in a sweet-sour dressing for sautéed mushrooms and gourmet greens. This salad works well with a dinner featuring ham or pork.
2 tablespoons lime juice
2 tablespoons maple syrup
1/4 teaspoon low-sodium soy sauce
1/4 teaspoon sesame oil
1/8 teaspoon black pepper
1 1/2 teaspoons vegetable oil
1 (8-ounce) package button mushrooms, quartered
6 cups gourmet salad greens
1/3 cup chopped green onions
1 tablespoon finely chopped fresh cilantro
How to Make It
Combine the first 5 ingredients in a small bowl, and stir well with a whisk.
Heat vegetable oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms; sauté for 6 minutes or until tender. Remove from heat; add maple mixture, tossing to coat. Combine greens, onions, and cilantro in a large bowl. Add mushroom mixture, tossing to coat. Serve immediately.
