If you can't find Meyer lemons, use regular lemon juice and add a pinch of sugar to approximate the flavor.

How to Make It

Step 1

To prepare dressing, combine shallots and mustard in a medium bowl, stirring with a whisk. Stir in 1/4 cup orange juice and next 3 ingredients (through pepper). Gradually add oil, stirring constantly with a whisk.

Step 2

To prepare salad, combine 2 tablespoons orange juice and pears, tossing to coat. Combine lettuces in a large bowl. Drizzle with dressing; toss gently to coat. Arrange about 1 cup lettuce mixture on each of 8 salad plates. Top each serving with about 1/4 cup pear and 1 1/2 tablespoons cheese.

Wonderful! Used regular lemons and added 1 tsp honey. Used walnut oil instead of olive for a lighter taste. This will be my go to salad dressing for winter greens.

I made this salad as directed using regular lemon & a pinch of sugar. Hubby said it was too tart. I agree. I loved the goat cheese & pears tho, they were lovey.

Very good and light. Perfect summer salad. I increased the amounts for the dressing then let everyone use what they wanted. Be careful of the salt it seemed a bit to salty at first till I diluted it with more of the other ingredients. Used Feta cheese since we had it already. Also if using a spring mix I found the Butter lettuce to be unnecessary, it just disappears in the mix.

This vinaigrette is amazing! that's basically what we used this recipe for; totally adapted the salad - grilled chicken, toasted pecans, spinach and asian pair. delicious!

Nice, light salad dressing, pretty on the plate. Served following CL's chicken with lemon-leek linguine. Very good.

This was probably too salty for MarkSZ because of the feta which is a pretty salty cheese. A chevre or other goat cheese is mild and creamy and should take the bite out of the tart lemon.
