Romaine, red-leaf, and Boston lettuce are tossed together with orange segments and crumbled goat cheese to create this simple Mixed Green Salad with Oranges. Top off the citrusy salad with the homemade vinaigrette made with Dijon mustard and orange juice. The green salad is a highlight to any meal.

How to Make It

Step 1

Make dressing: In a bowl, combine shallot, vinegar, juice, mustard and sugar. Slowly drizzle in oil, whisking constantly. Season with salt and pepper.

Step 2

Make salad: Mix lettuces in a large bowl. Add orange segments. Toss with dressing, crumble goat cheese on top and serve.

This was great with an orange salmon. We omitted the cheese and the dressing could definitely be better. Our full review is here: http://www.nickandalonakitchen.com/2017/04/orange-salmon-green-onions-with-mixed.html

I'm a firm believer that lettuce is lettuce and a salad is made or broken by its dressing. The dressing in this simple salad (3 lettuces, orange and goat cheese...simple) is excellent. There's a good match between mustard and orange juice (maybe just a little too much shallot). Definitely a beautiful presentation and tasty salad. I'm not much of a salad person but this salad even without the dressing was very good! my boyfriend loved it (he's pretty much a rabbit). I also went with feta cheese instead of goat.
