How to Make It

Step 1

Place 8 champagne glasses in freezer for 20 minutes.

Step 2

Combine 6 oz. frozen mixed berries (thawed), 1/4 cup orange juice and 1 Tbsp. sugar in a blender; blend until mixture is pureed, about 20 seconds. Strain berry mixture and discard seeds.

Step 3

Add 1 Tbsp. berry puree to each glass and pour in enough chilled sparkling wine to almost fill glass. Garnish with fresh mint. Serves

These look much better in the picture than real life. They were too sour for my taste. I tried the mixture of the berries with the orange juice and the sugar, and it seemed to blunt. Maybe if there was another ingredient or more sugar? I'm sure this has potential, but I won't bother making it again since I have so many other drink recipes to try first. Also, if you don't top the glass after the bubbles sit, it looks like a spoiled drink, Same as while you drink it: the berries stick on the glass in little dots and it doesn't look very pleasant.

This was the blurb from the slide-show gallery: This alcohol-free brunch drink looks gorgeous on display and is the perfect sweet foil to a heavy breakfast menu.Yet the recipe says to "pour in enough chilled sparkling wine to almost fill glass." I used sparkling water. It was only ok. Also, it was more work than needed for a cocktail.
