Mississippi Hush Puppies
This hush puppy recipe is a favorite of the Catfish Institute in Belzoni, Mississippi. Substituting beer for milk makes these lighter and tangier.

Uncle Martin would make these for us when we visited from Cali. I loved watching him make them. I'd always try to steal a few from the first batch. He'd always try to get me with the spoon. This is by far the best recipe. No restaurant can beat these puppies! They go great with fried fish and slaw.. Don't forget Grandma Nina's amazing meringue pie! There is nothing better. Miss those days. SC
I have been making this recipe for years. Everyone who tries them, including me, says they are the best hush puppies ever! The recipe stands on its own....no changes. Sometimes I make them ahead of time and just reheat them on a cookie sheet in the oven. They taste like they were just made. Leftovers, if there are any, are great reheated in the oven. These are absolutely the best!
My boyfriend and I hated these. They had a very strange taste...not at all like what I'm used to.
I have had this recipe in my file since I don't know when, but don't fry things anymore so I hadn't tried them until our 4th of July barbeque dinner. WOW! These are among the best I have every had! The restaurants have nothing on this recipe (except that they are made for you) and we will definitely be making them again and again and again! I did use beer rather than milk and they were crisp and light and wonderful!! All of our guests were blown away! It pays to save recipes! Thank you again SL!
