How to Make It

Step 1

Combine all ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer 7 minutes. Discard mint sprigs.

Step 2

Place mixture in a blender or food processor; process until smooth. Pour into a bowl; cover and chill.

Step 3

Pour chilled mixture into the freezer can of an ice cream freezer; freeze according to manufacturer's instructions.

I used organic frozen peaches. I made popsicles with half of the sorbet batch. It was outstanding. Mint and lime were great complements to the peach.
