Put away the loaf pan for these Mini Meat Loaves and get out your muffin tin. Each person gets their own individual "loaf" of this comfort food favoriite.

How to Make It

Step 1

Preheat oven to 450ºF. Combine beef, egg, bread crumbs, Parmesan, shallot, garlic, tomato paste, salt and pepper in a large bowl. Mix with your hands to combine well.

Step 2

Brush a 6-cup muffin tin with olive oil. Gently roll meat into 6 balls and place each in a muffin cup. Bake until cooked through, about 20 minutes.

My family loved these! They fought over the last one. I prepped the mini loaves in the am, covered them & refrigerated them until we got home from swim practice in the pm & baked them while I heated up veggies. Great recipe for a busy night. My only regret is that I wish I'd made more! Next time, I'll double the recipe,
