Makes 4 to 6 servings

Shred the apple and onion using the large holes of a box grater. Cheese grits and a salad make the perfect complements.

How to Make It

Step 1

Preheat oven to 375°. Gently combine ground turkey, next 6 ingredients, and 1/2 cup cheese just until combined, using hands. Spoon turkey mixture into 12 lightly greased muffin cups.

Step 2

Bake at 375° for 16 minutes. Sprinkle with remaining 3/4 cup cheese. Bake 5 minutes or until cheese is melted and a meat thermometer inserted into centers of meatloaves registers 165°.

Step 3

*Fine, dry breadcrumbs may be substituted.

Step 4

Mini Pesto-Turkey Meatloaves: Omit apple and pepper. Substitute mozzarella cheese for Cheddar cheese. Proceed with recipe as directed, stirring 2 Tbsp. chopped fresh basil and 3 Tbsp. refrigerated pesto into meat mixture in Step

Step 5

Note: For testing purposes only, we used Buitoni Pesto With Basil.

I made the original recipe using the pesto and mozzarella, loved it. Now it is my recipe for turkey burgers and they are very flavorful. My neighbor also made the apple/cheddar version but liked the pesto/mozzarella better.

This is a delicious and easy recipe! Pair it with cornbread, that's my recommendation. I thought shredding the apple and onion was kind of challenging so next time I will just chop them. Regardless, the sweetness the apple adds is what makes this recipe one I will continue to make, especially over regular meatloaf!

I really enjoyed this recipe. I added some bacon and also used some fried onions and pretzels in place of the bread crumbs, and it was fantastic!
