SkinnyJeans5's review was very helpful, however, in my normal seat-of-my-pants and hurried fashion, I didn't read it until AFTER I made the first batch. Not real sure I can work as fast as this recipe requires! I tried to spread the first batch with waxed paper and a potholder and that was a MAJOR mistake as the waxed paper stuck to the finished product :( But I knew this recipe had potential and I am very tenacious so I read the earlier review and persevered. This time I sprayed the spoon I used to mix with and a very large lasagna spatula to spread with and that worked great. Other than cooking spray on your spreader, it's key to have everything out and measured and work as fast as you can.....without burning yourself. It tastes good!
The taste and finished texture was outstanding! The directions could use a little more explanation. After the first 2 minutes of microwaving, the mixture was gummy. I added the almonds best I could. After the last two minutes it was hot, golden and liquid. You must pour everything in fast and work with a spatula coated in cooking spray. Mix fast and spread on the parchment paper. I didn't work fast enough to spread it a 1/4 inch. However, it still hardened beautifully and had a nice sheen and great taste. Will do again.
