1 can (4 oz.) cooked deveined small shrimp, rinsed and drained
1 tablespoon lime juice
1/2 teaspoon freshly ground black pepper
1/3 cup diced red pepper
1/4 cup chopped fresh cilantro leaves
2 tablespoons thinly sliced green onions
2 tablespoons light mayonnaise
4 slices multi-grain bread, toasted
Iceberg lettuce leaves
How to Make It
TOSS shrimp with lime juice and black pepper. Stir in red pepper, cilantro and green onion. STIR in mayonnaise and mix well. DIVIDE shrimp mixture between 2 bread slices. Top with lettuce and remaining bread slices. Recipe provided by Pepperidge Farm.
