Gotta say that this was amazingly tasty. I doubled the recipe to have extra post-company. Pretty much followed the recipe exactly, except that I roasted the red peppers instead of using bottled.. Super flavorful and exceptionally easy and quick to make. Will make it again (and again) this summer.
We are always looking for new meatless lunch recipes and this is great for sandwiches on whole wheat bread with arugula. I used less garlic and added a few tablespoons of tahini to make it more of a spread and less of a dip.
